    Description

    The Pulse at Repulse Bay welcomes Shoku Japanese Binchotan Grill, a new Japanese dining experience with a focus on Japan’s Binchotan grill. They are the first high-end Japanese restaurant located on the Southside of Hong Kong, Shoku is the much anticipated award-winning sister restaurant of “Kishoku Japanese Fine Dining” in Causeway Bay.

    Designed by award-winning interior designer Candice Chan Chao, Shou is a 4,000 square-foot beachfront venue with three private rooms featuring Hong Kong’s largest authentic Japanese “Binchotan” charcoal grill as its centerpiece. Guests are encouraged to choose from the selection of fresh seafood such as whole scallops, Kinki fish, surf clams, abalone, conch and much more from the display around the grill which is flown in daily from the best suppliers in Japan to both Shoku and Kishoku, and then cooked on the grill in front of the diners.

    Shoku uses binchotan, an extremely pure, high-carbon charcoal made from oak because its high density allows it to burn with very little smoke at a steady high heat over long periods so that it locks in the juices of seafood and meats and enhances the natural flavours of the food. (Apr 2016)

    The Buzz

    "For starters, the cod wafers were excellent - very crisp, after having been slightly toasted on the grill, and a perfect beer snack. Next up was the mixed salad with fresh crabmeat and yuzu dressing. It was a good-sized portion for two. We savoured the silver cod saikyo yaki, which was perfectly cooked, although served as two very different slices, one much larger than the other." -SCMP

    "We found the atmosphere comfortable and cozy, with a more cheerful décor than you regular Japanese restaurants, which tend toward darker hues and dim lighting. With light wood paneling, funky green and white geometric tiles and of course the sizzling grill taking centre stage, Shoku fits in seamlessly to its beachside surroundings.
