    Description

    Hanabi is all stylish elements, sleek angles and sophisticated interior design. Under the expert culinary leadership of Chef Michael Chan, Japanese cuisine is given a subtle fusion interpretation, exciting diners with seamless, intricate Japanese flavours boasting a modern flair.

    At lunch, guests are presented with tantalizing choices. The Hanabi Special Bento Box comprises three varieties of the freshest sashimi, five pieces of the most delicious sushi, and servings of grilled fish and sliced beef. Of course, the Chef’s Special Lunch Omakase easily steals the show. Chef Chan personally handpicks and decides on the dishes forming the menu, an exercise meant to showcase the day’s best produced – each variety of sashimi, grilled dish, and sushi is served only if it meets Chef Chan’s exacting standards.

    Four different Omakase menus are available during dinner service. The Creative Sashimi course is truly original. Choosing to eschew traditional conventions, each sashimi variety is paired with a special sauce, or unique accompanying dish. Diners are encouraged to consume these together, so that Chef Chan’s singular vision of Japanese–fusion Omakase is perfectly understood. The other stand–out is clearly the Grilled Item dish. Subtlety takes centre stage for this course on the Omakase menu. The Sanma and Kagoshima Wagyu are given a light touch; rather than over–season the already decadent meats, the true flavours of the fish and beef are allowed to shine through. Hanabi is indeed a welcome and refreshing addition to the Japanese dining scene in Hong Kong. (Jan 2017)
